I got the MTX 8302 and in the instructions it says when it's bridged, that I should only adjust the left-channel gain control (leaving the right channel all the way down, I guess).

Why can't I adjust both gains?

Maybe they just decided to let the left gain control both channels when its bridged?

Well, from my minimal understanding about bridging, both channels should work to be able adjust the gain... but maybe not...

Certainly it will work - as I connected the wires as if I were bridging it, and adjusted both channels' gains so they output exactly the same output voltage and used it for quite a bit like this before reading the manual (yeah yeah i know...) so perhaps I didn't push the amp to blowing, but is it that bad to adjust both gains?

Hmmm.... Never really thought about it before, as the cheap amps I've had before only had one gain adjustment knob....
